The Fat-Burning Sweet Potato Muffins You Can Eat For Breakfast (100% gluten-free!)

Here’s how to prepare the delicious sweet potato muffins:

Ingredients
1 sweet potato
2 tablespoons of olive oil
½ a cup of maple syrup
¼ cup of coconut flour
¾ cup of coconut milk
1 teaspoon of ground cloves
1 teaspoon of powdered ginger
A cup of brown rice flour
1 tablespoon of baking powder
1 tablespoon of powdered cinnamon
½ a teaspoon of Himalayan pink sea salt

Preparation
Before starting, take out your muffin tray and preheat the oven to 400F. Once it’s hot, poke a few holes in the sweet potatoes and put it in the oven to bake. You’ll need about an hour for the sweet potato to become soft. Leave it to cool down afterwards, then peel it and you can start preparing the muffins.

Mix the sweet potato, olive oil, coconut milk and maple syrup in a bowl, while mixing the dry ingredients in another bowl. Now, combine everything together and knead until you get a nice dough, then separate it in the muffin tray and bake the muffins for 30 minutes. Take them out in the end and enjoy!
